Nestled in a baby blanket, the answer to the emerging world food shortage could be found in Faribault. Aeroponics allows plants to grow in a reusable media, in this instance microfleece, the same material in baby blankets. By keeping the roots exposed to oxygen, a steady supply of a nutrient-rich water mist and ample grow lighting, the plants grow 100 percent faster than they would in soil and 50 percent faster than when using hydroponics, a water-based growing system. Add in the fact that the plants can be placed in trays that can be stacked vertically and you get 200 times the production as soil. And it reduces water and fertilizer use by 90 percent, making it environmentally conscious as well. Living Green Farm will host a dinner presentation, which is open to the public, at the Faribault Area Chamber of Commerce on Tuesday, February 26, Wednesday, February 27, Tuesday, March 5 and Wednesday, March 6. RSVP for the date of your convenience to Ken Sourbeck at Living Green Farm: 612-839-4180.

Know-How Brews specializes in the good, old-fashioned make your own brews, wines, cheeses or yogurts type of self-sufficiency. Since October 2011, the couple has been making their own beer and cheese at home, and soon discovered the benefits. The store is located at 512 Central Avenue in Faribault and has been open for about two weeks . . . it has already proven rather popular, especially with the home-brewers of Faribault. Know-How Brews offers more than just beer kits and equipment. There’s dairy cultures, yeasts, specialty grains, hops, bottles and even some monk-made products. All of the premium coffees, preserves and creamed honeys on their shelves are produced in monasteries. Regardless of what one chooses to make, owners Rusty and Ann Rybolt maintain that, with some practice, homemade products will beat out store-bought. A small commercial kitchen allows them offer samples of products. Hours: 4:30 to 8 p.m. Wednesday, Thursday, and Friday. 9:30 a.m. to 2 p.m. Saturdays. Website: knowhowbrewsandfoods.com
